Description

Fresh milk milked in spring is fermented with şirden yeast. After being left to settle for a week, the cheese that is fermented every day is kneaded as it accumulates. It is crushed under stones in cloth bags and dried in the north wind.

It matures after being kept for 120 days with the help of manual labor, the flavor of the fresh herbs of the region and the north wind. After this feverish process, overalls made of sheepskins are pressed.* Rich in protein and calcium.
