This centuries-old flavor, known as steppe tahini or double-roasted tahini, is made by squeezing the sesame collected from the Manavgat region using traditional methods in stone mills. Sesame seeds, which are purified from their bitterness by soaking in water, are peeled a day later and cooked in wood fire for five hours.
